I ride weekends, mostly trail with the occasional amateur race. How many hours before a top-end rebuild on a 300 2-stroke?

For a recreational rider, every 40–60 hours is the rule of thumb. Racing? Halve it. Always check piston clearance and replace rings with the piston. Use an hour meter — guessing costs engines.
