How do I stop stalling on steep uphill starts?
Every time I try a steep uphill start I stall the bike and end up paddling. What am I doing wrong with the clutch/throttle?

Pre-load the clutch at the friction zone before you even release the brake. Two fingers on the clutch, weight forward over the bars, and give it steady throttle — don't dump the clutch. Practice on a gentler hill first until it's muscle memory.
Gear down before the hill, not on it. Momentum is your friend — carry speed onto the climb so the clutch has less work to do.
